Dude's 31 yrs old. Not a good time to sign a RB. I don't know what the Eagles are thinking on that one.

Not sure I understand the negativity on this one. Gore has been one of the most consistent players at his position possibly ever. He didn't do anything last year to indicate he's about to go off the cliff. All they really need from him is a year or two, and maybe not even playing every down.
This means that the math of the McCoy trade works like this: Eagles get slightly worse at RB but may still have a guy who's really good; they gain a badass linebacker and probably around $8 million in cap space that they can use to sign a Pro Bowl or near Pro-Bowl level talent somewhere else. (Which is exactly what they just did with the Maxwell deal)
Basically, they traded McCoy for Frank Gore, Kiko Alonso and Byron Maxwell. Looks to me like they came out big-time winners in the whole thing.

He's over 30. Everyone knows that RBs typically decline rapidly after that.
1100 yards rushing isn't really that special and that's pretty much the best that he can give you. I doubt if he gets even 1000 yards with the Eagles.
It also looks like the Eagles are going to lose Maclin to the Chiefs. That's going to hurt them a lot.

Gore, however, can catch the ball out of the backfield and is decent in the passing game. Harbaugh never utilized that part of his game. I tend to agree that it is a little puzzling the Eagles would be interested in a back his age, but if he's splitting time with Sproles, it's not a terrible combo.
It depends on the player. Some are decent until they're 33 or 34. Some are done by age 27. Never can tell when it's going to come, but so far the guy has been remarkably durable. If they get a good year or two out of him, they've come out ahead, then on to the next guy.
Not All-Pro numbers, but did we forget about the mess we had with Dwyer, Redman, Jones, Davenport, etc.? What Gore gives you is you don't go through THAT. And that is something significant.
